Spinach and Egg yolks

Hard boil eggs -- perhaps 6. In a steam dish above the boiling eggs steam spinach. We buy organic baby spinach in that tub -- just put a few handfuls in the steam dish.

After the spinach is soft throw it in the food processor. Once the eggs are well hard-boiled (I let it go for about 12 minutes) throw them in some ice water for a few minutes. Shell them -- open them -- and throw the yolk in with the spinach. I like to fill about 2 or 3 4oz tupperwares each time so I want 6 to 12 yolks - that way I know there is 2 to 4 yolks in each tupperware....I think it depends on whether your kid likes the spinach or the yolk better. My daughter actually likes the spinach more so I usually use fewer yolks.

Anyway, run the processor with the yolks and spinach -- and thats that.

Allergy warning -- some kids are allergic to egg whites -- so use caution in introducing this recipe as likely some egg whites will end up in the food

Anyway, this is a great food as egg yolk is high calorie and both are healthy.
